Cool Melon Pops

Ingredients:

  • 3 cups fresh watermelon (seedless or seeds removed)

  • 1–2 tablespoons lime juice (freshly squeezed)

  • 1–2 teaspoons honey or maple syrup (optional, based on sweetness)

Optional add-ins:

A few fresh mint leaves

¼ cup coconut water for extra hydration

Pinch of sea salt (for electrolytes)

Instructions:

  1. Blend it up:
    In a blender, combine the watermelon, lime juice, and sweetener. Blend until smooth.

  2. Strain (optional):
    If you prefer a smoother texture, pour through a fine mesh strainer to remove pulp.

  3. Pour into molds:
    Fill popsicle molds, leaving a little space at the top for expansion.

  4. Insert sticks & freeze:
    Add popsicle sticks and freeze for at least 4–6 hours, or until solid.

  5. Remove & enjoy:
    Run warm water over the molds for a few seconds to release.

Makes:

About 6 popsicles, depending on mold size.
